To say that I love Chicken is an understatement. I LOVE CHICKEN. So I wanted to do like Southern fried chicken kind of meal for lunch. Chicken is easy to make and requires little time to prepare. I chose a really simple recipe that can be prepared during the weekend even, during the week. Gather all the ingredients that you need for the recipe and you are good to go. For the spices you can use your favorite or even chose to fry without the spices. Here’s my recipe for Friend Bread Crumbed Chicken.
4 chicken legs
2 beaten eggs
2 cups vegetable oil
1 cup flour
1 teaspoon Cumin
1 teaspoon Ginger
1 teaspoon salt
1 teaspoon mixed herbs
Boil chicken in water until cooked, like 10 minutes to ensure chicken doesn’t have any dripping blood. Set aside
Mix breadcrumbs with the spices Cumin, Ginger and Mixed Herbs.
Put Flour, Beaten Eggs and Breadcrumbs in three different plates.
Take one chicken leg, place it I flour and ensure that the drumstick is completely covered in the flour. Shake to remove excess flour.
Take the Floured drumstick and dip it in the plate filled with eggs, ensure it completely covered in the eggs. Let the extra egg drip off before dipping in breadcrumbs.
Place the Drumstick in the breadcrumbs and ensure it is fully coated with the breadcrumbs. Pat gently so that the breadcrumbs hold well on the drum stick
Repeat the process for the remaining Drumsticks until they are all done. Set aside.
In a large saucepan, heat vegetable oil on medium heat and place one piece of drumstick at a time, if the pan is big enough you can place more than one.
Fry the drumsticks until golden brown, remove from the pan and place on paper towel in a plate to drain the oil.
